Usually served in a portion big enough to share between the whole group. This dish comprises chopped up pancakes topped with fruit (usually plum or apple) preserves, sugar and cream. Definitely pudding. Do not make the error of ordering this just for yourself.
Kaiserschmarrn is at number six in my Top 10 Vegetarian Meals available in Austrian Ski resorts. Translations and the story of its invention vary a bit, most credit the dish to cooks in the court of Austrian Emperor Franz Joseph who were attempting to create a ‘light’ dessert for the Empress. She declined it, but the dessert became the Emperor’s favourite and became known as Emperor’s Nonsense.
Kaiserschmarrn Recipe
- 100g Plain Flour, sieved
- 1tblsp Sugar
- 2 Eggs
- 200ml Milk mixed with 50ml Water
- Butter
- Handful of Raisins (soaked in your favourite tipple)
- Plum Jam
- Whipped Cream
- Icing Sugar
How to Make Kaiserschmarrn
- Place the flour and sugar in a large mixing bowl; add the eggs to the centre.
- Incorporate the flour into the eggs with a whisk.
- Add the milk/water mix, a bit at a time, whisking as you go. Once it’s all in, continue to whisk until smooth and creamy.
- Melt a small knob of butter in a small frying pan, get the pan really hot.
- Add a couple of ladle-fuls of batter (about a quarter of the mixture), to make a nice think pancake.
- Cook for a couple of minutes, lift the edge with a knife to check for a golden colour.
- Flip over, using a good wrist action or a palette knife!
- Cook for about the same time on the second side.
- Slide out onto a plate and keep warm. Repeat until you have about four thick pancakes and have ran out of batter.
- Chop the pancakes roughly and throw onto a serving plate.
- Scatter the raisins all over.
- Place dollops of Jam and Cream ‘strategically’ over the plate (or serve in separate bowls if you prefer).
Serves Two: Sieve a generous spoonful of icing sugar over the lot and grab a couple of forks.
